  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 cup grated zucchini (about 1 medium)
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup milk
  • Zest of 1 orange
  • 1 cup chopped walnuts
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and applesauce.
  5. In a small bowl, whisk together the grated zucchini, cocoa powder, and milk until well combined.
  6. Add the zucchini mixture and the orange zest to the butter mixture and mix until just combined.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  8. Fold in the chopped walnuts and chocolate chips, if using.
  9. Pour the batter into the prepared loaf pan and spread evenly.
  10. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
