1 cup rolled oats
1/2 cup peanut butter (or other nut butter)
1/3 cup honey (or maple syrup)
1/4 cup chopped nuts (almonds, walnuts, etc.)
1/4 cup dried fruit (raisins, cranberries, etc.)
2 tablespoons chia seeds or flax seeds
2 tablespoons mini chocolate chips (optional)
Instructions
In a medium bowl, combine the rolled oats, chopped nuts, dried fruit, chia seeds, and chocolate chips (if using).
Add the peanut butter and honey to the bowl.
Stir everything together until well combined. The mixture should be sticky enough to hold together.
Roll the mixture into small balls, about 1 inch in diameter.
Place the energy bites on a plate or baking sheet lined with parchment paper.
Refrigerate for at least 30 minutes to allow them to firm up.
