6 ounces good quality dark chocolate (70% cacao recommended), chopped
1/2 cup unsalted butter, cut into pieces
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
4 large eggs, separated
1 cup heavy whipping cream
Instructions
Place the chopped dark chocolate and butter in a heatproof bowl set over a saucepan of simmering water (ensure the water does not touch the bottom of the bowl). Stir until completely melted and smooth. Remove from heat and stir in the sugar, vanilla extract, and salt. Let the mixture cool slightly, about 5 minutes.
Whisk the egg yolks into the slightly cooled chocolate mixture one at a time until fully incorporated. Set aside.
In a separate clean, dry bowl, beat the heavy whipping cream with an electric mixer until stiff peaks form. Set aside.
In another clean, dry bowl, beat the egg whites until stiff, glossy peaks form.
Gently fold one-third of the whipped cream into the chocolate mixture to lighten it. Then, gently fold in the remaining whipped cream until just combined. Do not overmix.
Carefully fold in the beaten egg whites in two additions, working gently to keep the mixture airy.
Spoon or pipe the mousse into individual serving dishes or small glasses.
Chill in the refrigerator for at least 4 hours, or until firm and set.
Notes
For a deeper flavor, add 1 teaspoon of instant espresso powder to the melted chocolate mixture.
If you prefer a lighter texture, you can substitute the egg whites with 1 cup of whipped cream, folding it in gently at the end.
