  • 1 cup whole milk, warmed
  • 8 tablespoons unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 2 cups sharp cheddar cheese, shredded, divided
  • 4 large eggs, lightly beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup green onions, sliced
  • 1/2 cup extra shredded cheddar cheese (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Bake the potatoes whole until tender, about 60 to 75 minutes. Let them cool slightly.
  3. Slice the potatoes in half lengthwise. Scoop the flesh into a large bowl, leaving about 1/4 inch of potato skin intact in each half.
  4. Place the scooped-out skins on a baking sheet.
  5. Mash the potato flesh thoroughly. Add the warm milk, butter, cream cheese, and sour cream. Mix until smooth.
  6. Stir in the 2 cups of shredded cheddar cheese, eggs, salt, and pepper. Mix just until combined.
  7. Gently fold in the crumbled bacon and most of the green onions, reserving some for garnish.
  8. Spoon the potato mixture evenly back into the potato skins.
  9. Arrange the filled skins in the prepared baking dish.
  10. Sprinkle the remaining 1/2 cup of shredded cheese over the top of the filled potatoes.
  11. Bake for 25 to 30 minutes, or until the casserole is heated through and the cheese topping is melted and lightly golden.
  12. Garnish with reserved green onions before serving hot.
